Ingredients

1 pound ground beef (85% lean)

1 medium zucchini, diced

1 medium sweet potato, peeled and cubed

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: chopped fresh parsley, shredded cheese, or hot sauce

Instructions

Prepare the Sweet Potato: In a large skillet, heat the olive oil over medium heat. Add the cubed sweet potato and sauté for about 5-7 minutes until it starts to soften, stirring occasionally.

Add Aromatics: Stir in the diced onion and minced garlic. Cook for an additional 3-4 minutes, until the onion becomes translucent and fragrant.

Cook the Ground Beef: Add the ground beef to the skillet. Use a spatula to break it up, cooking for about 5-7 minutes until it's browned and cooked through. Drain any excess fat if necessary.

Incorporate Zucchini: Once the beef is browned, add the diced zucchini to the skillet. Sprinkle with smoked paprika, oregano, salt, and pepper. Stir well to combine all ingredients.

Simmer: Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender and has released some moisture, allowing the flavors to meld together.

Taste and Adjust: Sample the dish and adjust salt, pepper, or spices as needed. If you like, top with fresh parsley, shredded cheese, or a drizzle of hot sauce before serving.

Serve: Enjoy your Ground Beef Zucchini Sweet Potato Skillet warm, either on its own or with a side of your favorite crusty bread.
