Ingredients

1 lb ground beef

4 medium potatoes, diced into 1-inch cubes

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, undrained

1 cup beef broth

2 tsp smoked paprika

1 tsp ground cumin

1 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onions and bell peppers, and sauté for about 3-4 minutes until softened.

Brown the Beef: Add the ground beef to the skillet. Season with salt, pepper, smoked paprika, cumin, and oregano. Cook until the beef is browned and crumbly, about 5-7 minutes. Drain excess fat if necessary.

Add Garlic and Potatoes: Stir in the minced garlic and diced potatoes. Cook for an additional 2-3 minutes, allowing the garlic to become fragrant.

Incorporate Tomatoes and Broth: Pour in the diced tomatoes (with juice) and beef broth. Stir well to combine all ingredients.

Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, or until the potatoes are tender, stirring occasionally.

Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or spices as desired.

Serve: Once the potatoes are cooked through, remove from heat and let it cool slightly. Garnish with fresh parsley before serving.
