Grilled Tandoori Chicken

4 pieces of chicken thighs or drumsticks (bone-in, skinless)

1 cup plain yogurt

2 tablespoons tandoori masala (store-bought or homemade)

1 tablespoon ginger paste

1 tablespoon garlic paste

1 tablespoon lemon juice

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika (for color)

1 teaspoon turmeric powder

1 teaspoon cayenne pepper (adjust for heat)

Salt to taste

Fresh coriander leaves for garnish

Lemon wedges for serving

Cooking oil for grilling

Prepare the Marinade: In a large bowl, combine the yogurt, tandoori masala, ginger paste, garlic paste, lemon juice, ground cumin, ground coriander, paprika, turmeric powder, cayenne pepper, and salt. Mix well until all ingredients are combined into a smooth paste.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are fully coated. Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow the flavors to penetrate the meat.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, make sure the coals are hot and ashen.

        Prepare for Grilling: Lightly oil the grill grates to prevent sticking. Take the marinated chicken out of the refrigerator and let it sit at room temperature for about 30 minutes before grilling.

          Grill the Chicken: Place the marinated chicken on the grill. Cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F, and there are nice char marks on the outside. Baste with additional marinade during grilling if desired.

            Rest & Serve: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. This helps retain the juices. Garnish with fresh coriander leaves and serve with lemon wedges on the side.
