2 lbs chicken thighs, boneless and skinless

1 cup plain yogurt

2 tablespoons lemon juice

4 cloves garlic, minced

1-inch piece fresh ginger, grated

2 teaspoons garam masala

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust to taste)

3 tablespoons vegetable oil

1 large onion, finely chopped

1 can (14 oz) crushed tomatoes

1 cup heavy cream

Salt, to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine yogurt, lemon juice, garlic, ginger, garam masala, cumin, coriander, turmeric, chili powder, and salt. Add the chicken, ensuring it’s well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Cook the Chicken: Preheat your oven to 400°F (200°C). Spread the marinated chicken on a baking sheet and bake for 20-25 minutes until cooked through and slightly charred. Alternatively, you can grill the chicken for a smoky flavor.

      Prepare the Sauce: In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown (about 8-10 minutes). Stir in the crushed tomatoes, and let it simmer for about 5 minutes.

        Create the Masala: Add the heavy cream to the tomato mixture, stirring well. Incorporate additional spices like garam masala, cumin, and chili powder to enhance flavor. Simmer for another 5 minutes until the sauce thickens.

          Combine: Once the chicken is cooked, cut it into bite-sized pieces (if necessary) and add it to the sauce. Simmer for another 5-10 minutes, allowing the flavors to marry together.

            Finish and Serve: Remove from heat, adjust salt to taste, and garnish with fresh cilantro. Serve hot with basmati rice or naan.
