4 medium potatoes, diced

2 large carrots, sliced

2 medium zucchinis, chopped

4 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the diced potatoes, sliced carrots, and chopped zucchini.

      In a separate small bowl, whisk together the olive oil, minced garlic, thyme, rosemary, oregano, salt, and pepper to create the marinade.

        Pour the marinade over the vegetables and toss well until they are evenly coated.

          Spread the vegetables out in a single layer on a baking sheet lined with parchment paper.

            Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through for even cooking.

              Once done, remove from the oven and allow to cool for a couple of minutes.
