Ingredients

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried)

1 tsp fresh thyme, chopped (or ½ tsp dried)

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet cut side down.

Roast the Potatoes: Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden and crispy. Flip them halfway through for even cooking.

Sear the Steak Bites: While the potatoes are roasting, season the steak cubes generously with salt and pepper. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned steak bites in a single layer, cooking for 2-3 minutes without stirring to form a nice crust.

Add Garlic and Herbs: Flip the steak bites and cook for another 2-3 minutes, then add the minced garlic, rosemary, thyme, and the remaining 1 tablespoon of butter. Continue cooking for another minute, tossing to coat the steak bites in the melted garlic butter and herbs.

Combine and Serve: Once the potatoes are done, remove them from the oven and toss them with the steak bites in the skillet for a minute. Transfer everything to a serving platter and garnish with chopped fresh parsley.

Enjoy: Serve immediately, savoring the juicy garlic butter steak bites alongside crispy potatoes!
