1.5 lbs sirloin steak, cut into 1-inch cubes

4 medium potatoes, diced into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by preheating your oven to 425°F (220°C). In a large bowl, toss the diced potatoes with olive oil, paprika, salt, and pepper until well coated. Spread them out on a baking sheet in a single layer.

    Bake the Potatoes: Place the baking sheet in the oven and bake for about 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

      Prepare the Steak Bites: While the potatoes are baking, season the steak cubes with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once the butter is sizzling, add the steak bites in a single layer (you may need to do this in batches).

        Sear the Steak Bites: Cook the steak for about 2-3 minutes on each side until nicely browned and cooked to your desired level of doneness. Remove the steak from the skillet and set it aside on a plate.
