Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into 1-inch cubes

2 tbsp olive oil

Salt and pepper, to taste

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

1 lb baby potatoes, halved

1 tsp paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: Begin by parboiling the baby potatoes in a large pot of salted water for about 10 minutes, or until just tender. Drain and let them cool slightly.

    Season the Potatoes: In a large bowl, toss the halved potatoes with olive oil, paprika, salt, and pepper.

      Sear the Potatoes: Heat a skillet over medium-high heat. Add the seasoned potatoes, cut side down. Cook for about 6-8 minutes, or until golden brown and crispy. Flip and cook for another 4-5 minutes until they are crispy all over. Remove from the pan and set aside.

        Cook the Steak Bites: In the same skillet, increase the heat to high. Add the remaining olive oil and let it heat up. Season the steak cubes generously with salt and pepper.

          Sear the Steak: Add the steak bites in a single layer. Sear them for about 1-2 minutes on each side for medium-rare, adjusting time for your preferred doneness. Do not overcrowd the pan; cook in batches if necessary. Remove steak bites and set aside.

            Make the Garlic Butter Sauce: Lower the heat to medium. In the same skillet, add the butter and let it melt. Add the minced garlic and thyme, cooking for about 1-2 minutes until fragrant, stirring occasionally.

              Combine: Return the steak bites to the skillet and toss them in the garlic butter sauce until well-coated.
