Ingredients

2 ribeye steaks (about 1 inch thick)

1 lb baby potatoes (halved)

4 tablespoons unsalted butter

6 cloves garlic (minced)

2 tablespoons olive oil

1 teaspoon fresh rosemary (finely chopped)

1 teaspoon fresh thyme (finely chopped)

Salt and black pepper to taste

Optional: Fresh parsley (for garnish)

Instructions

Boil the Potatoes: In a medium pot, add the halved baby potatoes and cover them with water. Bring to a boil and season with salt. Cook the potatoes for about 10-15 minutes, or until fork-tender. Drain and set aside.

Prepare the Steak: While the potatoes are boiling, take the ribeye steaks out of the fridge and let them sit at room temperature for about 20-30 minutes. This ensures even cooking. Pat them dry with paper towels and season generously with salt and pepper on both sides.

Sear the Steak: In a large skillet or cast-iron pan, heat the olive oil over medium-high heat. Once hot, add the seasoned steaks. Sear them for about 4-5 minutes on each side for medium-rare, adjusting the time as necessary for your preferred doneness.

Make the Garlic Butter: In the last couple of minutes of cooking the steak, push the steaks to one side of the pan. Add the butter, minced garlic, rosemary, and thyme to the other side. Allow the butter to melt and the garlic to sauté for about 1-2 minutes, ensuring it doesn’t burn.

Baste the Steak: Using a spoon, continuously baste the melted garlic butter over the steaks for enhanced flavor. Once cooked to desired doneness, remove the steaks from the pan and let them rest on a plate, covering with foil to keep warm.

Sauté the Potatoes: In the same skillet with the remaining garlic butter, add the drained potatoes. Cook over medium heat, tossing occasionally, until they are golden brown and crispy, about 5-7 minutes. Season with additional salt and pepper to taste.

Serve: Slice the rested steaks and serve them alongside the sautéed garlic butter potatoes. Drizzle any remaining garlic butter from the skillet over the steak for an extra flavor boost. Garnish with fresh parsley if desired.
