Garlic Butter Steak and Potatoes Skillet

Ingredients
  

1 lb (450g) sirloin steak, cut into 1-inch cubes

1 lb (450g) baby potatoes, halved

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or 1/2 tsp dried)

1 tsp fresh thyme, chopped (or 1/2 tsp dried)

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

    Sear the Steak: In a large skillet over medium-high heat, add the olive oil. Once hot, add the cubed steak. Season with salt and pepper. Sear for about 4-5 minutes, turning occasionally, until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add 2 tablespoons of butter. Once melted, add the cooked potatoes. Sauté until they are golden brown and crispy, about 5-7 minutes. Stir occasionally to ensure even cooking.

        Add Garlic and Herbs: Push the potatoes to one side of the skillet. In the empty space, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for 1-2 minutes until fragrant.

          Combine Ingredients: Add the steak back into the skillet, along with the fresh rosemary and thyme. Toss everything together to combine, heating through for another 2-3 minutes.
