Garlic Butter chicken Bites

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus extra for garnish)

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for heat)

Juice of 1 lemon

Lemon wedges, for serving

Prepare the Chicken: In a mixing bowl, toss the chicken pieces with paprika, salt, pepper, and red pepper flakes until evenly coated.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of butter over medium-high heat. Add the seasoned chicken pieces and cook for about 5-7 minutes, or until they are golden brown and cooked through, stirring occasionally. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet, adding the lemon juice and chopped parsley. Toss to coat the chicken in the garlic butter sauce. Cook for an additional 1-2 minutes to heat through.

          Serve: Garnish with more fresh parsley and serve with lemon wedges on the side.
