Fruit Salsa with Cinnamon Chips

For the Fruit Salsa:

1 cup strawberries, hulled and diced

1 cup mango, diced

1 cup kiwi, peeled and diced

1 cup pineapple, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons honey or agave syrup

Pinch of salt

Zest of 1 lime

For the Cinnamon Chips:

6 flour tortillas

1/4 cup melted butter or coconut oil

1/4 cup granulated sugar

1 teaspoon ground cinnamon

Instructions
 

Prepare the Fruit Salsa:

    - In a large mixing bowl, combine the diced strawberries, mango, kiwi, pineapple, red onion, and cilantro.

      - Squeeze the lime juice over the mixed fruits.

        - Add the honey (or agave syrup), salt, and lime zest. Gently stir to combine all the ingredients.

          - Taste and adjust the sweetness or lime juice as needed. Let the salsa sit for at least 15-20 minutes to allow the flavors to meld.

            Make the Cinnamon Chips:

              - Preheat your oven to 350°F (175°C).

                - Brush one side of each tortilla with melted butter or coconut oil.

                  - In a small bowl, mix the granulated sugar and ground cinnamon.

                    - Sprinkle the cinnamon sugar mixture evenly over the buttered side of the tortillas.

                      - Cut each tortilla into wedges (like a pizza) and place them on a baking sheet, sugar side up.

                        - Bake for 10-12 minutes or until the chips are golden and crispy. Keep an eye on them to prevent burning.

                          Serve:

                            - Remove the chips from the oven and let them cool slightly.

                              - Serve the fruit salsa in a bowl alongside the cinnamon chips for dipping.
