4 cups fresh corn kernels (about 6-8 ears of corn)

1 medium onion, diced

2 medium potatoes, peeled and diced

2 cloves garlic, minced

1 red bell pepper, diced

3 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Optional: Crumbled bacon or crispy shallots for topping

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and red bell pepper. Sauté for about 5 minutes, or until the onions are translucent.

    Add Garlic and Spices: Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.

      Cook the Corn and Potatoes: Add the corn kernels and diced potatoes to the pot. Pour in the vegetable broth and bring to a simmer. Let it cook for about 15-20 minutes, or until the potatoes are tender.
