Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sriracha (adjust to taste)

3 cups chicken broth

2 packs of instant ramen noodles (discard flavor packets)

1 cup sliced mushrooms (shiitake or button)

1 cup baby spinach

1 tablespoon olive oil

2 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon soy sauce

1 tablespoon sesame oil

2 green onions, chopped

Salt and pepper to taste

Red pepper flakes (optional, for extra heat)

Soft-boiled eggs (optional, for garnish)

Instructions
 

Prepare the Chicken Marinade: In a bowl, mix gochujang, sriracha, and a pinch of salt. Add the chicken thighs, coating them well with the marinade. Let marinate for at least 15 minutes (or up to 1 hour for more flavor).

    Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side until fully cooked and caramelized. Remove from heat, let cool slightly, and slice.

      Make the Creamy Garlic Sauce: In a small saucepan, heat the sesame oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Pour in heavy cream and soy sauce, whisking until smooth. Let it simmer for 2-3 minutes, then season with salt, pepper, and a pinch of red pepper flakes. Remove from heat.

        Cook the Ramen Noodles: In a large pot, bring the chicken broth to a simmer. Add the sliced mushrooms and cook for 3-4 minutes until tender. Add the ramen noodles and cook according to package instructions (usually about 3-4 minutes). In the last minute of cooking, stir in the baby spinach until wilted.

          Assemble the Ramen Bowls: Divide the cooked ramen, mushrooms, and broth evenly among serving bowls. Top with sliced chicken, a drizzle of the creamy garlic sauce, and garnish with chopped green onions.

            Optional Additions: If desired, add a soft-boiled egg on top of each bowl for added richness.
