Easy Tuscan Chicken Pasta (40-Minutes)

12 oz penne pasta

2 boneless, skinless chicken breasts (about 1 lb)

2 tbsp olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

      Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes per side, or until browned and cooked through. Remove from the skillet and let it rest for a few minutes before slicing it into strips.

        Sauté the Garlic and Veggies: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they begin to blister. Stir in the fresh spinach and cook until wilted.

          Make the Sauce: Lower the heat to medium and stir in the heavy cream, mixing well. Add the grated Parmesan cheese and stir until melted and combined. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.

            Combine Everything: Add the cooked penne pasta and sliced chicken back into the skillet. Toss everything together to coat evenly in the creamy sauce.

              Serve: Adjust seasoning with additional salt and pepper if needed. Garnish with fresh basil leaves if desired. Serve immediately and enjoy!
