Easy Spinach & Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

¼ cup grated Parmesan cheese

1 egg

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot, boil salted water and cook the jumbo pasta shells according to package directions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

        Stuff the Shells: Carefully take each pasta shell and fill it with a generous spoonful of the spinach and ricotta mixture. Place the filled shells into a greased 9x13-inch baking dish.

          Add the Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired before serving.
