Ingredients

12 large pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)

1/2 cup grated Parmesan cheese

1 cup marinara sauce

1 garlic clove, minced

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 teaspoon dried Italian seasoning

Salt to taste

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta shells and cook according to package instructions until al dente (usually about 9-11 minutes). Drain and set aside to cool.

Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, minced garlic, black pepper, red pepper flakes (if using), Italian seasoning, and salt. Mix until all ingredients are well incorporated.

Stuff the Shells: Take each pasta shell and gently spoon the spinach and ricotta mixture into it, packing it lightly but not overstuffing.

Assemble the Dish: Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed shells seam-side up in the dish. Once all shells are arranged, pour the remaining marinara sauce over the topped shells.

Add the Cheese: Sprinkle the shredded mozzarella evenly over the stuffed shells.

Bake: Cover the baking dish with aluminum foil (to prevent sticking, spray the foil with cooking spray side down) and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Let the shells cool for a few minutes, then drizzle with fresh basil leaves. Serve warm and enjoy!
