20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a skillet over medium heat, add a drizzle of olive oil and sauté minced garlic until fragrant (about 1 minute). Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

      Mix the Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, cooked spinach, egg, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Take a spoonful of the spinach and ricotta mixture and fill each jumbo shell. Place the filled shells in a baking dish.

          Add Sauce: Pour the marinara sauce over the stuffed shells, ensuring they are well coated. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Serve: Let the stuffed shells cool for a few minutes. Garnish with fresh basil if desired and serve warm.
