Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

For the Chicken Skewers:

1 lb boneless, skinless chicken thighs (cut into 1-inch pieces)

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 tablespoon vegetable oil

3 cloves garlic (minced)

1 tablespoon ginger (grated)

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 tablespoon lime juice

8 wooden skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon brown sugar

1 teaspoon chili garlic sauce (adjust to taste)

1 teaspoon sesame oil

Chopped peanuts and fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, vegetable oil, garlic, ginger, ground coriander, turmeric, and lime juice. Add the chicken pieces, mixing well to ensure the chicken is evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Skewers: Preheat your grill to medium-high heat. While the grill is heating, thread the marinated chicken chunks onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

      Make the Peanut Sauce: In a medium saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili garlic sauce, and sesame oil. Stir continuously until smooth and warmed through. If the sauce is too thick, add a bit more coconut milk to reach your desired consistency. Set aside.

        Grill the Skewers: Place the chicken skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Make sure the internal temperature reaches 165°F (75°C).

          Serve: Remove the skewers from the grill and let them rest for a minute. Serve warm with the peanut sauce drizzled over or on the side. Garnish with chopped peanuts and fresh cilantro if desired.
