Easy Cowboy Butter Chicken Linguine

8 oz linguine pasta

2 tbsp unsalted butter

1 lb boneless, skinless chicken breasts, diced

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp cayenne pepper (adjust to taste)

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup frozen peas

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: In a large skillet over medium heat, melt the butter. Add the diced chicken and season with salt, pepper, paprika, chili powder, and cayenne pepper. Cook until the chicken is golden and cooked through (about 5-7 minutes).

      Sauté the Garlic: Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.

        Make the Sauce: Pour in the heavy cream and stir well. Add the cherry tomatoes and frozen peas. Let the mixture simmer for about 5 minutes, allowing the sauce to thicken and the tomatoes to soften.

          Combine Pasta and Sauce: Add the drained linguine to the skillet, tossing to combine. If the sauce is too thick, incorporate some of the reserved pasta water until you reach your desired consistency. Taste and adjust seasoning if needed.

            Serve: Remove from heat and serve immediately, garnished with fresh parsley and grated Parmesan cheese, if desired.
