8 oz linguine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

4 tbsp cowboy butter (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh spinach

4 cloves garlic, minced

1/2 tsp smoked paprika

1/2 tsp onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare the Chicken: In a large skillet over medium heat, add the cowboy butter. Once melted, add the chicken pieces, and season with smoked paprika, onion powder, salt, and pepper. Cook for about 7-10 minutes, or until the chicken is browned and cooked through.
