Ingredients

1 lb boneless, skinless chicken breasts

1/2 cup chipotle ranch dressing

2 cups cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheese (cheddar or Mexican blend)

1 ripe avocado, sliced

1 cup diced tomatoes

1/2 cup chopped fresh cilantro

4 large flour tortillas

Lime wedges (for serving)

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, mix the chicken breasts with 1/4 cup of chipotle ranch dressing. Let it marinate for at least 30 minutes in the refrigerator to absorb the flavors.

Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and season with salt and pepper. Grill the chicken for about 6-8 minutes on each side, or until cooked through and internal temperature reaches 165°F. Once done, let it rest for 5 minutes before slicing.

Prepare the Burrito Fillings: In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, and chopped cilantro. Add a bit of lime juice, salt, and pepper for seasoning.

Assemble the Burrito: Lay a tortilla flat on a clean surface. Spread 1 tablespoon of chipotle ranch dressing in the center, followed by a scoop of the rice mixture, some sliced grilled chicken, slices of avocado, and a sprinkle of cheese.

Wrap the Burrito: Fold in the sides of the tortilla, then roll it up tightly from the bottom, making sure to encase all the fillings.

Toast the Burrito (optional): Return the wrapped burrito to the grill or a hot skillet and toast for 2-3 minutes on each side until golden brown and crispy.

Serve: Slice the burrito in half and serve with lime wedges and extra chipotle ranch dressing on the side for dipping.
