2 medium chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded lettuce

1 cup diced tomatoes

1 ripe avocado, sliced

1/2 cup shredded cheese (cheddar or a Mexican blend)

1/2 cup Chipotle Ranch dressing (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for a deeper flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-8 minutes per side, or until fully cooked and juices run clear (internal temperature should reach 165°F). Let the chicken rest for 5 minutes before slicing it into strips.

      Prepare the Burritto Filling: In a large mixing bowl, combine the cooked rice, black beans, and corn. Mix well to make a hearty filling.

        Assemble the Burritos: Lay a tortilla flat and layer a generous scoop of the rice, bean, and corn mixture in the center. Add sliced grilled chicken, a handful of shredded lettuce, diced tomatoes, avocado slices, and a sprinkle of cheese.
