2 large cucumbers, thinly sliced

1 teaspoon salt

1/4 cup rice vinegar

2 tablespoons sugar

1 tablespoon soy sauce

1 teaspoon sesame oil

1 garlic clove, minced

1 teaspoon grated fresh ginger

2 tablespoons chopped fresh cilantro

1 tablespoon sesame seeds

1 red chili, thinly sliced (optional for heat)

Instructions
 

In a large bowl, sprinkle the sliced cucumbers with salt and let them sit for about 10 minutes to draw out excess water.

    While the cucumbers are resting, prepare the dressing. In a small bowl, whisk together rice vinegar, sugar, soy sauce, sesame oil, minced garlic, and grated ginger until the sugar dissolves.

      After 10 minutes, drain the liquid from the cucumbers and pat them dry with a paper towel.

        Pour the dressing over the cucumbers and toss well to combine.

          Fold in the chopped cilantro, sesame seeds, and sliced red chili (if using) for an extra kick.

            Allow the salad to marinate for at least 15 minutes in the fridge before serving. This lets the flavors meld beautifully.

              Serve cold as a refreshing side dish or appetizer.
