1 lb ground chicken

1 cup onion, finely chopped

1/2 cup bell pepper, finely chopped (green or red)

2 cloves garlic, minced

1/2 cup celery, finely chopped

1 can (14 oz) diced tomatoes, undrained

1/4 cup tomato paste

2 tbsp Cajun seasoning

1 tbsp Worcestershire sauce

1 tbsp hot sauce (adjust to taste)

1 tsp smoked paprika

1 tsp brown sugar

Salt and pepper, to taste

4 hamburger buns

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Chicken: In a large skillet over medium heat, add the ground chicken. Cook until browned and crumbled, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Vegetables: Add the chopped onion, bell pepper, celery, and garlic to the skillet. Sauté until the vegetables are softened, about 4-5 minutes.

      Add Spices and Tomatoes: Stir in the Cajun seasoning, smoked paprika, and brown sugar. Cook for another minute until fragrant. Add the diced tomatoes (with juices), tomato paste, Worcestershire sauce, and hot sauce. Mix well.

        Simmer: Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until thickened. Taste and adjust seasoning with salt, pepper, and additional hot sauce if desired.

          Prepare Buns: While the mixture is simmering, you can toast the hamburger buns if you prefer.

            Assemble: Spoon the Cajun chicken mixture onto the bottom half of each bun. Top with the other half of the bun and garnish with chopped parsley.
