Crispy Hot Honey Feta Chicken

For the chicken:

4 boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust to taste)

Oil for frying

For the hot honey feta sauce:

1/2 cup crumbled feta cheese

1/4 cup honey

1 tablespoon red pepper flakes (adjust to taste)

1 tablespoon lemon juice

2 tablespoons olive oil

Salt and pepper to taste

For garnish:

Fresh chopped parsley or cilantro

Lemon wedges

Instructions
 

Marinate the Chicken: In a bowl, mix the chicken thighs with buttermilk. Cover and refrigerate for at least 2 hours or overnight for better flavor.

    Prepare the Coating: In a large bowl, combine flour, cornmeal, garlic powder, onion powder, smoked paprika, salt, pepper, and cayenne pepper. Mix well.

      Heat the Oil: In a deep skillet or a heavy pot, heat about 1 inch of oil over medium-high heat until it reaches 350°F (175°C).

        Dredge the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, making sure to coat evenly, and shake off excess.
