500g boneless chicken thighs, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1/2 cup all-purpose flour

Salt and pepper, to taste

Oil, for frying

4 cloves garlic, minced

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon freshly grated ginger

Sliced green onions and sesame seeds, for garnish

Prepare the Chicken: In a bowl, season the chicken pieces with salt and pepper. Set up a dredging station with three bowls: one with cornstarch, one with beaten eggs, and another with all-purpose flour.

    Coat the Chicken: Dredge each piece of chicken first in cornstarch, then dip into the beaten eggs, and finally coat with flour, pressing lightly to ensure it sticks. Set aside on a plate.

      Heat the Oil: In a large skillet or wok, heat 1/2 inch of oil over medium-high heat until hot. You can test the oil by dropping in a small piece of batter; it should sizzle immediately.

        Fry the Chicken: Carefully add the coated chicken pieces to the hot oil, avoiding overcrowding. Fry in batches for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

          Make the Sauce: In a separate pan, add a little oil and sauté the minced garlic over medium heat until fragrant (about 30 seconds). Add honey, soy sauce, rice vinegar, sesame oil, and grated ginger. Stir well and bring to a gentle simmer for 2-3 minutes until slightly thickened.

            Combine the Chicken and Sauce: Add the fried chicken to the sauce and toss well until all pieces are evenly coated.
