Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon lime juice

Optional: chopped green onions and sesame seeds for garnish

Instructions

Prepare the Salmon:

    - Preheat your deep fryer or a pot with vegetable oil to 350°F (175°C).

      - In a bowl, combine flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

        Dredging Station:

          - Set up three bowls: one with the seasoned flour, one with the beaten egg, and one with panko breadcrumbs.

            Coat the Salmon:

              - Take each piece of salmon, first dredge it in the seasoned flour, then dip it in the beaten egg, and finally coat it with panko breadcrumbs. Ensure each piece is well coated.

                Fry the Salmon Bites:

                  - Carefully place the coated salmon pieces into the hot oil, working in batches to avoid crowding. Fry for about 3-4 minutes or until golden brown and crispy.

                    - Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

                      Make the Bang Bang Sauce:

                        - In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Taste and adjust the spiciness as desired.

                          Serve:

                            - Plate the crispy salmon bites and drizzle or dip them generously in the Bang Bang sauce. Garnish with chopped green onions and sesame seeds if desired.
