Creamy Tuscan Ravioli Soup

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

4 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 package (9 oz) fresh or frozen cheese ravioli

2 cups baby spinach

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and Italian seasoning, cooking for an additional 1-2 minutes until fragrant.

      Pour in the vegetable or chicken broth and the diced tomatoes, bringing the mixture to a boil.

        Reduce heat and stir in the heavy cream, allowing the soup to simmer gently for about 5 minutes.

          Add the ravioli to the pot and cook according to package instructions, usually around 4-6 minutes for fresh ravioli, or longer for frozen.

            Once the ravioli are cooked, stir in the baby spinach and grated Parmesan cheese. Cook until the spinach wilts, approximately 2-3 minutes.

              Season the soup with salt and pepper to taste.

                Serve hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan if desired.
