Ingredients

8 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

8 oz fresh mushrooms, sliced

1 cup asparagus, trimmed and cut into 1-inch pieces

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions

Cook Penne: Start by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Add the chicken to the skillet and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add Vegetables: In the same skillet, add the sliced mushrooms and asparagus. Sauté for about 5 minutes until the vegetables are tender. Add minced garlic and cook for another minute until fragrant.

Make the Sauce: Pour in the heavy cream, then stir in the Parmesan cheese and Dijon mustard. Cook over low heat, stirring continuously until the sauce thickens slightly. Season with additional salt and pepper to taste.

Combine: Return the cooked chicken to the skillet and add the drained penne pasta. Toss everything together until well combined and heated through.

Serve: Garnish with fresh parsley before serving. Enjoy your creamy mushroom and asparagus chicken penne!
