8 oz spaghetti or fettuccine

3 tablespoons ssamjang (Korean fermented soybean and chili paste)

1 cup heavy cream

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon honey or sugar (optional for sweetness)

1/2 cup grated Parmesan cheese

1/2 cup diced cooked chicken or tofu (optional)

1/4 cup sliced green onions

1 tablespoon toasted sesame seeds

Salt and pepper to taste

Extra green onions for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Ssamjang Sauce: In a large skillet over medium heat, add the sesame oil and sauté the minced garlic until fragrant, about 1 minute.

      Mix in the Ssamjang: Stir in the ssamjang, soy sauce, and honey/sugar (if using). Cook for another minute, allowing the flavors to meld.

        Create the Creamy Base: Pour in the heavy cream, stirring continuously. Let boil gently for about 2-3 minutes until the sauce thickens slightly. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.

          Add Cheese: Stir in the grated Parmesan cheese until it melts completely and combines with the sauce.

            Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it with the creamy ssamjang sauce. If adding chicken or tofu, include it in this step as well to heat through.

              Season and Serve: Adjust seasoning with salt and pepper to taste. Once well combined, remove from heat.

                Garnish: Plate the creamy ssamjang pasta and sprinkle with green onions and toasted sesame seeds for an added crunch.
