Ingredients

2 cups elbow macaroni

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon black pepper

1 tablespoon honey

1 teaspoon paprika

2 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt to taste

Chopped parsley (for garnish)

Instructions

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken breasts and season with garlic powder, onion powder, black pepper, paprika, and honey. Cook for 6-8 minutes, or until the chicken is cooked through and slightly caramelized. Remove the chicken from the skillet and set aside.

Make the Cheese Sauce: In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly and golden. Gradually whisk in the whole milk, ensuring no lumps remain. Stir continuously until the mixture thickens and starts to bubble.

Add Cheese: Reduce heat to low and stir in the Dijon mustard, cheddar cheese, and mozzarella cheese until melted and smooth. Season with salt to taste.

Combine: Add the cooked macaroni and sautéed chicken to the cheese sauce, stirring until well combined.

Serve: Serve hot, garnished with chopped parsley for a burst of color and freshness.
