1 lb (450g) rotini pasta

2 tablespoons olive oil

1 lb (450g) boneless skinless chicken breasts, sliced into strips

Salt and pepper, to taste

5 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the sliced chicken breasts with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the oregano and thyme, allowing the spices to bloom for about 30 seconds.

        Add Broth and Cream: Pour in the chicken broth and bring to a simmer. Reduce the heat to low, gradually whisk in the heavy cream and let it bubble gently for about 2 minutes.

          Incorporate Cheese: Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

            Combine Chicken and Pasta: Return the seared chicken to the skillet and add the cooked rotini. Toss everything together until fully coated in the creamy sauce.
