Creamy Chicken Sausage Orzo Skillet

Ingredients
  

1 tablespoon olive oil

1 pound chicken sausage (sliced)

1 medium onion (diced)

3 cloves garlic (minced)

1 cup orzo pasta

4 cups chicken broth

1 cup cherry tomatoes (halved)

1 cup spinach (fresh)

1 teaspoon Italian seasoning

Salt and pepper (to taste)

½ cup heavy cream

½ cup grated Parmesan cheese

Fresh basil (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.

      Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly in the pan.

        Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for about 10-12 minutes or until the orzo is tender and most of the liquid is absorbed.

          Add the halved cherry tomatoes, spinach, Italian seasoning, and the cooked chicken sausage back into the skillet. Stir until the spinach wilts, about 2-3 minutes.

            Reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese until well combined, creating a creamy sauce. Season with salt and pepper to taste.

              Remove from heat and let it sit for a couple of minutes to thicken slightly. Garnish with fresh basil before serving.
