Ingredients

1 pound chicken sausage, sliced

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon thyme

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving, optional)

Instructions

Heat the Olive Oil: In a large skillet or pan, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

Cook the Sausage: Add the sliced chicken sausage to the pan. Sauté until browned and cooked through, about 5-7 minutes.

Add Garlic and Seasonings: Stir in the minced garlic, dried oregano, and thyme. Sauté for another minute until fragrant.

Cook the Orzo: Add the orzo pasta to the skillet, stirring to coat it with the sausage and onion mixture. Pour in the chicken broth and bring it to a boil. Reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the orzo is al dente.

Stir in Cream and Vegetables: Once the orzo is cooked, gently stir in the heavy cream, chopped spinach, and halved cherry tomatoes. Continue cooking for an additional 3-5 minutes until the spinach wilts and the tomatoes soften. Season with salt and pepper to taste.

Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve hot, with grated Parmesan cheese on the side if desired.
