Creamy Cajun Chicken Pasta

Ingredients
  

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

8 ounces fettuccine or penne pasta

1 tablespoon butter

3 cloves garlic, minced

1 bell pepper (red or green), sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: sliced green onions for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts evenly with Cajun seasoning, coating both sides well.

    Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or penne according to package instructions until al dente. Drain and set aside.

      Sear the Chicken: In a large skillet over medium-high heat, heat olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing it into thin strips.

        Sauté Vegetables: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sliced bell pepper. Sauté for 3-4 minutes until the peppers are tender.

          Make the Sauce: Pour in the chicken broth and bring to a simmer. Slowly add the heavy cream, stirring well until combined. Continue to cook for a couple of minutes, allowing the sauce to thicken slightly.

            Combine Everything: Lower the heat and stir in the grated Parmesan cheese until melted and creamy. Add the cooked pasta to the sauce, tossing to coat. Add the sliced grilled chicken and stir to combine. Season with salt and pepper to taste.
