8 ounces of fettuccine or pasta of your choice

2 tablespoons of olive oil

1 pound of boneless, skinless chicken thighs, cut into bite-sized pieces

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

4 tablespoons of unsalted butter

4 cloves of garlic, minced

1 teaspoon red pepper flakes (adjust for spice level)

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare the Chicken: In a large skillet over medium-high heat, add the olive oil. Season the chicken pieces with smoked paprika, garlic powder, onion powder, salt, and black pepper. Once the oil is hot, add the chicken to the skillet and cook for 6-8 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside.

      Make the Cowboy Butter Sauce: In the same skillet, lower the heat to medium and add the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the red pepper flakes and cook for another 30 seconds.

        Combine Ingredients: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer, then add the cherry tomatoes and spinach. Cook for about 5 minutes until the spinach wilts and the tomatoes soften.
