Cinnamon Sugar French Toast Muffins

6 slices of challah or brioche bread, cut into cubes

4 large eggs

1 cup whole milk

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup maple syrup (optional, for serving)

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with non-stick spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread and melted butter. Toss to coat and let it cool slightly.

      Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

        Combine Ingredients: Pour the egg mixture over the coated bread cubes and gently fold everything together until the bread is evenly soaked. Let it sit for 10 minutes to absorb the liquid.

          Fill Muffin Tin: Divide the soaked bread evenly into the prepared muffin tin. Pack it down gently but do not cram it too tightly.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

              Prepare Cinnamon Sugar Coating: While the muffins are baking, mix the 1/4 cup granulated sugar with 1 tablespoon ground cinnamon in a small bowl.
