3 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper.

    In a large bowl, mix the mashed bananas and melted coconut oil until well combined.

      Add the brown sugar and granulated sugar to the banana mixture, stirring until smooth.

        Beat in the eggs one at a time, then stir in the vanilla extract.

          In another bowl, whisk together the flour, baking soda, baking powder, and salt.

            Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

              Gently fold in the chocolate chips and nuts (if using).

                Pour the batter into the prepared baking pan, smoothing it out evenly.

                  Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
