Chinese Beef and Broccoli

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

1 medium onion, thinly sliced

3 cloves garlic, minced

1 inch piece of ginger, grated

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp cornstarch

2 tbsp vegetable oil (for stir-frying)

1 tsp sesame oil

1/4 cup beef broth or water

1 tsp sugar

Freshly ground black pepper to taste

Cooked rice or noodles for serving

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, cornstarch, and a pinch of black pepper. Mix well and let marinate for at least 20 minutes.

    Prepare the Broccoli: Bring a pot of water to a boil and blanch the broccoli florets for 2 minutes. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      Make the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, beef broth (or water), sugar, and sesame oil. Set aside.

        Stir-Fry the Steak: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer and cook for about 2–3 minutes until browned. Remove the beef from the pan and set aside.

          Sauté Vegetables: In the same pan, add the remaining tablespoon of oil. Sauté the onion, garlic, and ginger for about 1–2 minutes until fragrant. Add the blanched broccoli and stir-fry for another 2 minutes.

            Combine Everything: Return the beef to the skillet with the sautéed vegetables. Pour the sauce over the mixture and stir well to combine. Cook for an additional 2–3 minutes or until the sauce thickens slightly and the beef is cooked through.

              Serve: Serve hot over steamed rice or noodles, garnished with sesame seeds if desired.
