Chinese Beef and Broccoli

1 lb flank steak, sliced thinly against the grain

2 cups broccoli florets

3 cloves garlic, minced

1-inch piece fresh ginger, grated

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon rice vinegar

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 tablespoon sugar

Salt and black pepper to taste

Cooked jasmine rice, for serving

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with soy sauce, cornstarch, sugar, and a dash of black pepper. Mix well and let it marinate for at least 30 minutes to enhance the flavor.

    Prepare the Broccoli: Blanch the broccoli florets in boiling water for 2 minutes, then immediately transfer them to an ice bath to stop the cooking. Drain and set aside.

      Make the Sauce: In a separate bowl, whisk together the oyster sauce, rice vinegar, and sesame oil. Set this sauce aside.

        Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef in a single layer and sear it for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

          Cook the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.

            Combine Ingredients: Return the beef to the skillet along with the blanched broccoli. Pour the sauce over the mixture. Stir well to coat everything evenly. Cook for another 2-3 minutes or until the sauce thickens and the broccoli is tender but still vibrant.
