8 oz elbow macaroni

1 lb ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with green chilies for an extra kick)

1 small onion, diced

3 cloves garlic, minced

2 cups beef or vegetable broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 tbsp olive oil

Chopped green onions and cilantro for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add minced garlic and ground meat, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes.

      Combine Ingredients: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well and cook for an additional 2 minutes to toast the spices.

        Add Tomatoes and Beans: Pour in the diced tomatoes (with their juices), kidney beans, black beans, and broth. Stir to combine and bring to a simmer. Allow to cook for 8-10 minutes, letting the flavors meld together.

          Mix in Macaroni and Cheese: Add the drained macaroni to the meat mixture and stir well. Gradually fold in 1.5 cups of the shredded cheddar cheese until melted and creamy.

            Serve: Remove from heat, top with the remaining cheddar cheese, and cover until melted. Serve hot, garnished with chopped green onions and cilantro if desired.
