1 pound ground chicken

2 tablespoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

1 red bell pepper, chopped (for skewers)

1 zucchini, sliced (for skewers)

1 cup mango, diced

½ red onion, finely chopped

¼ cup fresh cilantro, chopped

Juice of 1 lime

Instructions
 

In a large bowl, combine the ground chicken, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well incorporated.

    Form the chicken mixture into small sausage-shaped patties or links, depending on your preference.

      Preheat a grill or grill pan over medium heat. Brush with olive oil to prevent sticking.

        On skewers, alternate between the chicken sausage, red bell pepper, and zucchini.

          Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

            Meanwhile, prepare the mango salsa by combining diced mango, red onion, cilantro, and lime juice in a bowl. Mix gently to combine.
