Ingredients

2 boneless, skinless chicken breasts, thinly sliced

2 packs of instant ramen noodles (discard the seasoning packets)

1 cup broccoli florets

1 red bell pepper, sliced

1 cup snap peas

3 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon ginger, freshly grated

Salt and pepper to taste

Sesame seeds (optional, for garnish)

Instructions

Cook the Ramen: In a pot of boiling water, cook the instant ramen noodles according to package instructions, usually about 3 minutes. Drain and set aside.

Prepare the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.

Add the Veggies: Add the minced garlic, grated ginger, broccoli, red bell pepper, and snap peas to the skillet. Stir fry for about 3-4 minutes until the vegetables are tender-crisp.

Combine Ramen and Sauces: Add the cooked ramen noodles to the skillet. Pour in the soy sauce and hoisin sauce, then drizzle the sesame oil over the mixture. Toss everything together for about 2-3 minutes until well combined and heated through.

Finish and Serve: Remove from heat, toss in the chopped green onions, and adjust seasoning if needed. Serve hot, garnished with sesame seeds if desired.
