Chicken Avocado Melt Sandwich

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 ripe avocado, pitted and mashed

1 tablespoon lime juice

4 slices of your favorite bread (sourdough, whole grain, or ciabatta)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 medium tomato, sliced

Fresh spinach leaves or arugula

Optional: hot sauce, for serving

Cook the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side or until golden brown and fully cooked. Remove from skillet, let rest for a few minutes, then slice it thinly.

    Prepare the Avocado Spread: In a bowl, combine the mashed avocado with lime juice, adding a pinch of salt and pepper for taste. Mix until creamy and thoroughly combined.

      Assemble the Sandwich: Preheat a grill pan or sandwich press over medium heat. Spread a generous layer of the avocado mixture on one side of each bread slice. Top two slices with the cooked chicken slices, followed by a layer of tomato slices, shredded cheese, and spinach or arugula. Place the remaining slices of bread on top, avocado side down.
