2 cups cooked brown rice

1 pound chicken breast, diced

1 large sweet potato, peeled and cubed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 avocado, sliced

¼ cup fresh cilantro, chopped

Prepare the Sweet Potatoes: Preheat the oven to 425°F (220°C). Toss the cubed sweet potatoes in half of the olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Spread them on a baking sheet in a single layer and roast for 20-25 minutes, or until they are tender and caramelized, flipping halfway through.
