1 can (15 oz) kidney beans, drained and rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to taste)

1 tsp ginger paste

1 tsp cumin seeds

1 tsp garam masala

1 tsp smoked paprika

½ cup shredded cheese (cheddar or mozzarella)

2 tbsp olive oil

Salt to taste

Fresh cilantro, chopped (for garnish)

4 slices of whole-grain bread

1 tbsp butter (optional)

Instructions
 

In a medium skillet, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.

    Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.

      Stir in the minced garlic, ginger paste, and chopped green chili. Sauté for another 2 minutes, allowing the flavors to meld.

        Add the drained kidney beans, smoking paprika, and garam masala. Stir well to coat the beans in the spices, and cook for about 5 minutes. If the mixture is too dry, add a tablespoon of water to keep it moist.

          Season with salt to taste, and lower the heat. Sprinkle in the shredded cheese, stirring gently until melted and combined with the beans. Remove from heat.

            Meanwhile, toast the slices of bread until golden brown. For an extra kick of flavor, butter the toast lightly before serving.

              Spoon the cheesy masala beans generously over the toasted bread. Garnish with fresh chopped cilantro, and serve immediately.
