12 oz cheese-filled tortellini

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
