8 medium-sized russet potatoes, peeled and diced

1 lb (450g) bacon, chopped

1 medium onion, finely chopped

3 cups shredded sharp cheddar cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (if needed)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with non-stick spray or a little olive oil.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Once done, remove the bacon from the skillet and drain on paper towels, reserving about 2 tablespoons of the bacon grease in the pan.

      Sauté the Onions: Add the chopped onion to the skillet with the reserved bacon grease and sauté until softened and translucent, about 4-5 minutes.

        Prepare Potatoes: In a large bowl, combine the diced potatoes, sautéed onions, crispy bacon (reserve a handful for topping), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until the potatoes are fully coated with the seasonings.

          Egg Mixture: In another bowl, whisk together the eggs, milk, and a pinch of salt and pepper. Incorporate 2 cups of the shredded cheddar cheese into the egg mixture, reserving 1 cup for later.

            Combine: Pour the egg and cheese mixture over the potato-bacon mixture and stir gently until everything is well combined.

              Bake: Transfer the mixture to the prepared casserole dish. Spread it evenly across the dish and sprinkle the reserved bacon and the remaining 1 cup of cheddar cheese on top.

                Cooking Time: Bake in the preheated oven for 45-50 minutes, or until the casserole is golden brown and set in the middle.

                  Cool and Serve: Allow the casserole to cool for about 10 minutes before serving. This will help it set up a bit more and make for easier cutting.
