1 cup rolled oats

2 cups almond milk (or your preferred milk)

1 medium carrot, grated

1/4 cup grated apple (for sweetness)

1/4 cup chopped walnuts (optional)

1/4 cup raisins or sultanas

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 cup maple syrup or honey (to taste)

1 tsp vanilla extract

A pinch of salt

Cream cheese (optional, for topping)

Extra walnuts and grated carrot (for garnish)

Instructions
 

In a medium saucepan, combine the rolled oats and almond milk over medium heat. Stir to mix and bring to a gentle simmer.

    Add the grated carrot, grated apple, ground cinnamon, nutmeg, and a pinch of salt to the saucepan. Stir until well combined.

      Cook the mixture, stirring occasionally, for about 5-7 minutes, or until the oats have absorbed most of the milk and reached your desired creaminess.
